1四川擔擔麵
材料: 500毫升豬骨湯,2-3湯匙花生醬,1-2匙辣椒油,160-200克乾麵條,50克免治豬肉,1湯匙切碎榨菜,1湯匙切碎浸軟蝦米,1湯匙切碎乾蔥,1茶匙切碎蒜頭,1湯匙切碎紅辣椒,1湯匙切碎蔥,1湯匙辣豆瓣醬,2湯匙焗香花生碎(撒面)
做法: 1.燒2湯匙油,將蒜頭、乾蔥爆香至金黃色,加豬肉、蝦米、紅辣椒、榨菜炒熟,下豆瓣醬兜勻。
2.豬骨上湯煮滾,加花生醬拌勻,再加辣椒油。
3.麵條煮熟,分放兩碗內,肉餡鋪麵上,淋上熱湯,洒上蔥花和花生碎。

乾麵條(煮熟瀝乾) 200克
榨菜(切碎) 1湯匙
乾蔥茸 1湯匙
辣椒碎 1湯匙
蔥粒 1湯匙
豆瓣醬 1湯匙
花生醬 2湯匙
免治豬肉 50克
蝦米(浸軟,切碎) 1湯匙
蒜茸 1茶匙
焗香花生碎(灑面) 2湯匙
辣椒油 2茶匙
清湯 500毫升
做法:
1.炒熟豬肉後,加入所有材料(麵條,清湯,辣椒油,花生醬除外).
2.煲滾清湯後加入辣椒油,花生醬拌勻.
3.將麵條放入碗內,淋上肉碎及清湯,灑上焗香花生碎便可.
Don Don Noodles
For 2 person
Ingredients:200 g Dried Noodles,cooked and drained
1 tbsp pickled mustard tuber,diced
1 tbsp shallot
1 tbsp red chilly pepper
1 tbsp green onion
1 tbsp spicy bean paste
2 tbsp peanut butter
50 g minced pork
1 tbsp sun-dried shrimp,soaked and diced
1 tsp garlic,diced
2 tbsp dried peanut,diced
2 tsp chili oil
500 ml pork bone broth
Method:
1.Heat oil in pan,stir-fry all ingredients until cooked(except Noodles,pork bone broth,chili oil,dried peanut)
2.Add peanut butter and chili oil into pork bone broth and heat to a boil.
3.Place noodles into two bowls.Add fried ingredients onto noodles and pour in heated broth,add dried peanut on top.
